150 g feta cheese |
500 g minced lamb |
0.25 tsp chilli harissa |
0.5 tsp Santa Maria Tellicherry Black Pepper |
0.5 tsp Santa Maria Rock Salt |
Yoghurt Sauce |

200 ml Greek yoghurt |
2 tbsp olive oil |
1 garlic clove |
0.5 tsp Santa Maria Rock Salt |
Mint and Grain Salad |

200 g barley grain |
0.5 cucumber |
6 radishes |
1 red onion |
70 g rocket |
1 tbsp Moroccan seasoning |
1 tbsp parsley |
1 lemon, the juice of |
50 ml olive oil |
How to prepare
Boil the barley as per the directions on the packet and leave to cool. Crumble the feta cheese into a bowl and mix with minced lamb, Harissa Chilli, Black Pepper and salt. Shape the mixture into burgers. Place somewhere cool until they are ready to be cooked.
Mix together the yoghurt, olive oil, garlic and salt. Place somewhere cool.
Add the barley to a bowl together with the cucumber, radishes, red onion, rocket, mint, parsley, lemon and olive oil. Add salt and pepper to taste. Place somewhere cool until serving.
Grill or shallow fry the lamb burgers. Serve hot with the yoghurt sauce and salad.
