1 tbsp Oil, for frying |

50 g Butter |
Warm Tomato and Mozzarella Salad |

600 g Cherry tomatoes |
1 Shallot, finely chopped |
2 tbsp Olive oil |
250 g Mini mozzarella balls |
50 g Fresh basil |
0.5 tsp Santa Maria Rock Salt |
1 tsp Santa Maria Tellicherry Black Pepper |
How to prepare
Sirloin steak
Heat the oil in a large frying pan, add the steaks and cook for two minutes on each side, until browned or cooked to your liking. Remove from the pan and set aside to rest.
Season the meat with Chicken & Steak spice.
Browned Butter
Place butter and the Chicken & Steak spice in a small saucepan over medium heat and immediately start whisking. Stir as it bubbles and after 2-3 minutes you should start to see brown bits appear on the bottom of the pan.
Remove from heat immediately and continue to whisk for another 30 seconds or so. Pour on top of the steak to serve.
Warm Tomato and mozzarella salad
Preheat the oven to 230 ° C/Gas Mark 8. Cut the tomatoes in half and place in an ovenproof dish.
Sprinkle the tomatoes with olive oil, black pepper, shallots and Rock Salt. Cook in the oven for about 3 minutes.
Put the mozzarella on top of the tomotoes in the ovenproof dish and put the basil on top. Serve immediately together with the steaks and the butter.
